I stumbled across a box of limes for $6 at the markets and couldn’t refuse such a bargain.  It did take me a little while to work out exactly what to do with 50 limes but after a few days of them sitting on the kitchen table, I decided to make use of them in a few batches of lime cordial.  I used this recipe, but reduced the sugar quantity by two cups per batch, which for me, created the perfect balance of sweet and sour.  The finished product is perfectly refreshing poured over some ice cubes and topped with sparkling water.  So if you ever find yourself with a bundle of limes – try this recipe.  It is delish.
