Tomorrow is Australia Day. And to celebrate, we’re baking a salmon. We have a few friends coming over so, with the countdown as our soundtrack, ice cold beer and champagne and an absolute feast for lunch – it is sure to be a festive occasion. I love any excuse to set a table nicely. With some flowers, a few candles, placemats and linen napkins – it doesn’t take much to make it look beautiful. For tomorrow’s lunch, I’ve discovered some Banksia trees that dot the perimeter of our local park and have taken a few cuttings for a native Australian centrepiece. I will be sure to post pictures of the food, as well as the recipes, on Monday.
