I love simple recipes with few ingredients that you can throw together, substituting what you have on hand, to make something that is a little luxury.  This is one of those recipes.  Grilled chicken schnitzel sandwich with caper mayonnaise, vine ripened tomatoes and baby spinach.  A great, fresh lunch meal that is both tasty and satisfying.

    I love that you’ve quoted Hairy Maclary! I had a very dear sausage dog named Schnitzel von Crumb, we called her Snitch for short!
