With an unwell toddler and a self imposed quarantine, we had a very quiet weekend.  I wanted to make something that Jack could eat that was comforting, but also a little bit healthy.  Macaroni and cheese is a deliciously comforting dish at any time.  With the addition of a layer of spinach, this version adds some super green nutrients which never go astray.  I’m going to keep this recipe on file for next time I have a garden full of silverbeet.

    Love this recipe. I must try this, mac and cheese is my favorite. I love your healthy spin on it. I have only tried making this dish with cauliflower which is great but trying it with spinach will be a great new twist for my family.
