The warmer weather has certainly hit us in Queensland. I’ve been on the search for some different salad varieties to eat for lunches and came across this tortilla salad recipe which sounded delicious. I added some diced chicken breast marinated in 1 teaspoon each paprika, cajun seasoning and chilli powder as well as the corn sliced from one cob. I also added what I would say is an essential dollop of sour cream. It was filling and tasty and fresh and light. I was glad to have stumbled across it and am looking forward to finding different combinations of vegetables to add into the mix for next time.
