Having a vegetable garden is a wonderful thing.  When I grow something from a teeny seed into a fully developed vegetable I feel like I want to make the most of it.  It doesn’t feel quite right to chop them up into a regular casserole or salad – I like to make a dish where they really shine.

Our corn husks were finally ready for picking so I had a little think about how to showcase them in all their corn-y brilliance.  This recipe is so easy and so tasty.  If you haven’t had corn in a while – try this recipe and remember how delicious it can be.  Quite spicy but oh my…in fact, I think I’m going to go and eat another one right now.

    Another corn recipe for you (similar and delicious!):

    – Grill corn on BBQ (you want some nice charred bits on there)

    – Roll in mayo (yes, mayo)

    – Roll in finely grated parmesan (finely grated so that it melts)

    – Sprinkle with smoked paprika (has to be smoked!)

    – Eat!

    I think this is my favorite way to eat corn! Your homegrown corn must taste amazing!
